"If making a crust involves too much time, too many calories, or anything else that's problematic, you can omit it altogether, changing a dish from a tart to a timbale or a flan. To make up for the lost texture of the crust, grace the top of the dish with fresh bread crumbs crisped in olive oil or butter.
"To bake a savory timbale or flan, select a glass or ceramic loaf pan, gratin dish, or four to six ramekins. Butter them well. Add two or three beaten eggs to the vegetable mixture if it doesn't have any binder and increase the seasonings by half. Pour the mixture into the buttered dish. Set the flan in a larger dish and add warm water to come halfway up the sides. Bake at 375F until well set, and the top is beginning to brown, for 20 to 35 minutes, depending on the size of the dish. When a toothpick comes out clean, the flan is done."
