having a problem with the health department about our sushi rice. it is not held at 140 degrees which the law states it should be. but with the added vinegar it should be non hazzardous. does anyone have documentation to prove its non hazzardous, or have any suggestions because my customers won't eat hot sushi and it is insane to throw the rice away every four hours.

Food can be preserved either if it's hot or cold. Instead of using heat, try using ice/refrigeration.
