Subject:ISO: The creamy white mexican cheese

My DH and children spend about $12 at the local mexican eatery just by themselves ORDERING that darn white,silky smooth cheese sauce they put on top of the beans (for the bean dip)

Does anyone know what cheese that is or how to make it?

I would SO appreciate it!!! THANK YOU SO MUCH! It has to be cheaper than paying $12 TWICE a month to get not even 1 C worth of cheese sauce per two people!!!!
