Methoxypyrazines??

Prologue: "It is the presence of tiny amounts of methoxypyrazines that give Sauvignon Blanc...its grassy character. If methoxypyrazines are reduced in grape growing, flavors of grapefruit, pineapple, melon and fig emerge. This is done by removing the leaves next to the fruit, exposing the grapes to more sunlight"...by Dr. Marian Baldy in "The University Wine Course"

Postscript: How popular is Sauvignon Blanc? Well, the hottest varietal right now is Merlot. Yet, in 1996 supermarket sales, Sauvignon Blanc had the same share of sales as Merlot!
