Hip, Hip, Hurrah for Yakima

Prologue: "One of the sturdiest winery opertions in Washington State's Yakima Valley, Staton Hills' top wines include an understated yet stylish Cabernet Sauvignon"... from Bob Thompson's "Wine Atlas."

The Rest of the Story: The northwest Indian tribe's name was "Eyakima." It meant "well fed people." They certainly were. In fact, today Yakima produces more apples, more mint and more hops than any other county in the USA. The fertile Yakima Valley, blessed with 300 days a year of sunshine, also is starting to produce some remarkable Cabernet Sauvignon grapes that show world-class potential. To see what the excitement is all about, try the Staton Hills '92 Cab. It's more Bordeaux than Stags Leap.. more gentle than bold... but with plenty of staying power to harmonize with my Beef Wellington.

Postscript: The Yakima Valley is delineated by Rattlesnake Mountain, Horse Haven Hills, etc. To learn more about this colorful area, see "Wine Regions of America" by Prof. John Baxevanis.
