Singapore Rapport

Prologue: "Our customers who are not very familiar with wine usually order Chardonnay. The more knowledgeable order Gewurztraminer." Chris Yeo, founder of San Francisco's award-winning Singapore Straits Cafe.

The Rest of The Story: Chris Yeo's popular "Ayam Kalasan" features crisp chicken breast fillets with a spicy fresh chili, lemongrass and garlic sauce. It's about a two-alarm fire, which I extinguished with a..spicy Preston Gewurztraminer. I chose the Preston because of its delicate character...a heavier Gewurtz can have such intense cinnamon and honey flavors that they sometimes dominate rather than support the food.

Also, my panel tried it alone as an aperitif. They liked the hint of sugar, and loved the price of $5.50.
