For a cocktail, there's no need to break out the fine Champagne. Look into alternative and affordable sparklers, such as Sofia Blanc de Blancs, which even comes in convenient little cans, which is helpful when you only need a small amount.
1 lemon, quartered and seeded
2 ounces sake
1 ounce sugar syrup
1 ounce dry sparkling wine
Place the lemon wedges in a shaker and muddle well using the handle of a wooden spoon. Add ice, the sake, and sugar syrup. Shake well, strain into a chilled cocktail glass, and top with the sparkling wine.
