
Makes 1 serving
2 ice cubes
1/2 cup cubed peeled peaches (see tip, page 244 of the book)
2 tsp freshly squeezed lemon juice
1 tsp grenadine
1/2 oz peach schnapps
2 oz chilled sparkling wine
In blender, pulse ice and peach until ice is crushed. On high speed, blend in lemon juice, grenadine and peach schnapps until slushy. Pour into a wide-mouthed champagne glass or a martini glass and top with sparkling wine.
