Plum Sake

Plum Sake

Makes two 3-ounce drinks

 

This is a wonderful summer cocktail that takes advantage of fresh seasonal plums. It's just as nice in the winter made with dried plums.

4 ounces sake (see Straight Up)
4 ounces plum wine
4 ounces fresh lime juice (from approximately 4 limes)
1 teaspoon confectioners' or superfine sugar
2 slices dark red plums or 2 dried plum halves or
     2 slices lime for garnish

GLASSWARE: Cocktail glasses (see page 24 of the book)

Fill a cocktail shaker with ice. Add the sake, plum wine, lime juice, and sugar. Shake vigorously until the outside of the shaker is thoroughly beaded with sweat and is extremely cold to the touch.

Place a plum slice in each cocktail glass. Add the sake mix and serve.

STRAIGHT UP

Sake, made from rice, has as wide a range of textures and flavors as wine or beer. Some sakes are robust and dry and some are soft and fruity. For this plum sake cocktail, choose an off-dry or medium-dry style. Not all sake is meant to be drunk hot, though that is the only way many Americans have ever had it. Some sake is best served ice-cold.
