Mojito

Makes four 8-ounce drinks

 

The mojito was the original drink of the Cuban working class. A cooling, thirst-quenching mojito was a great way to end the day. The current formalized recipe was created at the La Bodeguita hotel in Cuba, one of Hemingway's haunts. If you prefer this drink short and stronger, cut the seltzer to 4 ounces or omit it.

12 fresh mint sprigs
4 ounces Simple Syrup (page 56 of the book)
4 ounces fresh lime juice (from approximately 4 limes)
Ice for serving
8 ounces white rum
24 ounces seltzer

GLASSWARE: Highball glasses (see page 23)

In each of the highball glasses place 2 mint sprigs, 1 ounce syrup, and 1 ounce lime juice. Muddle the ingredients together (see page 22).

Add ice and 2 ounces rum to each glass and stir to blend. Fill each glass with seltzer, garnish with the remaining mint, and serve.
