Grilled Pineapple Rings

Serves 6-8

 

Home-Smoked Spicy Ginger Ham Lime juice adds just a touch of tartness to this sweetly satisfying grilled treat.

 

1 ripe fresh pineapple
   (look for a golden color and an
   inner leaf that can be easily pulled out)
1 stick (1/2 cup) of unsalted butter, melted
3/4 cup of brown sugar
Zest and juice of 2 limes
Pinch of ground cloves

 

Preheat the grill to high and oil the grate just before grilling.

Cut the top off the pineapple and remove the rind and any spots in the flesh. Slice the pineapple into 1-inch thick rounds. Combine the melted butter and lime juice in a bowl. In a separate bowl, combine the sugar, lime zest, and ground cloves. Dip each slice of pineapple in the butter and lime juice mixture before dipping it in the sugar mixture. Shake off any excess sugar before placing the rounds on the grill.

Grill the pineapple rounds for about 5 minutes on each side, or until they're sizzling and browned. Serve on a separate dish, or arranged around the ham on a platter.
