Lemon Cashew Bread

Makes 2 loaves

3 cups all-purpose flour
1 teaspoon baking soda
1 tablespoon salt
1/2 teaspoon baking powder
3 eggs
1-1/2 cups sugar
1 cup of vegetable oil
1-1/2 cups Blue Bunny Sour Cream
1/2 cup fresh lemon juice
2 tablespoons grated lemon peel
1 cup chopped cashews

 

Combine flour, baking soda and baking powder; mix well and set aside. In a large mixing bowl, beat eggs and sugar. Add oil and beat well. Beat in sour cream, lemon juice and lemon peel. Add dry ingredients, beating on low speed just until combined. Fold in cashews. Spoon entire mixture into two greased 8-1/2" x 4-1/2" x 2-1/2" loaf pans. Bake at 325 degrees F for 45-50 minutes or until a wooden pick inserted in center tests clean. Cool in pan 10 minutes before removing to a wire rack.
