Serves 6
Marinade:
1/2 cup fresh orange juice
1/4 cup olive oil
1 tbsp thyme, chopped
2 tbsp parsley, chopped
2 tbsp finely chopped orange zest
1 tsp cracked black pepper
Salt
Fish:
6 swordfish steaks (6 oz each) about 1" thick
Cooking Spray
Olive oil for brushing
Method:
Combine all marinade ingredients (all ingredients except swordfish) well. Season swordfish on both sides with salt. Place swordfish in a zip-top plastic bag, and marinate for 45 minutes, turning every 15 minutes. (If steaks do not fit well in one bag, divide steaks and marinade evenly between 2 zip top plastic bags).
Spray grill rack well with cooking spray. Preheat grill to medium-high heat. Remove fish from marinade. Brush with olive oil. Grill steaks until well browned and cooked through. Serve immediately.
