You can make this zesty, all-purpose sauce with smooth mustard, but the coarse seeds in whole-grain mustard add texture and contrast. This sauce zips up the flavors of poached salmon, broiled or poached chicken, grilled meats, sliced tomatoes, celery sticks, and salad greens. Use 1/2 cup to make the 15-Minute Potato Salad in Chapter 19. Because this sauce requires no special equipment, appliances, or heat, kids old enough to handle measuring spoons and cups can make this sauce with just parental supervision. If parents cut the lemon in half, kids won't need knives, either.
Prep time: 5 minutes
Yield: Makes about 1-1/2 cups
Do this first:
Squeeze 2 tablespoons fresh lemon juice from one lemon.
1/2 cup lowfat yogurt
1/2 cup mayonnaise, regular or lowfat
4 tablespoons coarse-ground Maille or Dijon mustard
2 tablespoons fresh lemon juice
2 teaspoons prepared horseradish (optional)
1/8 teaspoon salt, or to taste
1. In a small bowl, stir together all of the ingredients until they're blended.
2. Cover and chill until ready to use. It keeps in the refrigerator for up to 5 days.
