Makes: 12 servings
Warm spices and apples make this the perfect autumn dessert.
6 Golden Delicious apples, peeled, cored, and quartered
1/4 cup apple juice
1/4 cup firmly packed brown sugar
1 tablespoon chopped crystallized ginger
1 tablespoon cornstarch
1 package (14 ounces) gingerbread cookie and cake mix
1 cup water
1. Heat oven to 350 degrees F. Place apples, apple juice, brown sugar, ginger, and cornstarch in a shallow 2 quart dish. Toss to combine.
2. Prepare gingerbread according to package directions, using the water. Spoon over apples, spreading evenly.
3. Bake until gingerbread is cooked through, about 50 minutes. Serve warm.
