This is an ideal drink for a cold winter night. It can be made quickly and easily, and it's a nice way to show someone you think they're special. You'll need smooth, good-quality chocolate ice cream or sorbet; either will work here, though I think the whipped cream garnish is a necessity if you choose sorbet. Not for the kids, as it contains alcohol.
To soften the ice cream or sorbet, remove lid and plastic liner (if any) from a one pint carton. Microwave at medium (50%) power for about 10 to 20 seconds, or just until your product begins to soften.
1-1/2 cups cold water
3 Tbsp. good-quality chocolate syrup, divided
2 large scoops good-quality
chocolate ice cream OR sorbet, softened
2 Tbsp. orange OR chocolate liqueur
2 tsp. instant coffee granules
For Serving:
Lightly sweetened whipped cream
In small pot, heat water to boiling. While water heats, place 1-1/2 Tbsp. Of chocolate syrup in each of two mugs of about 12 ounce capacity. Place 1 scoop of the softened ice cream or sorbet on top of the syrup in each mug, then pour 1 Tbsp. Of liqueur on top of each scoop. Do not stir.
As soon as water comes to a full boil, remove from heat. Quickly add instant coffee and stir to dissolve. Pour half the hot coffee carefully into each mug. Stir briskly to dissolve chocolate syrup. Garnish, if desired, with lightly sweetened whipped cream. Serve immediately!
