This is, as the name implies, a soothing hot drink. It can be made quickly and easily, and it's a nice way to show someone you think they're special. This isn't for kids, of course (it's too good for 'em!). You'll need smooth, good-quality chocolate ice cream or sorbet (no "add-ins"); both work well, though I think the whipped cream garnish is really necessary if you use the sorbet.
To soften the ice cream or sorbet, remove the lid and plastic liner (if any) from a one-pint carton. Microwave at medium (50%) power for about 10-20 seconds, or just until ice cream is beginning to soften.
1-1/2 cups cold water
3 Tbsp. good-quality chocolate syrup, divided
2 large scoops good-quality chocolate ice cream
or sorbet, softened
2 tsp. instant coffee granules
Optional: 2 Tbsps. orange OR chocolate liqueur
For serving:
Lightly sweetened whipped cream
In small pot, heat water to boiling. While water heats, place 1-1/2 tablespoons chocolate syrup into the bottom of each of two large (12 oz. capacity) mugs. Place 1 scoop of softened ice cream or sorbet on top of the chocolate syrup in each mug. If you're using the liqueur, place pour 1 tablespoon into each mug. Do not stir.
As soon as water comes to full boil, remove from heat. Quickly add instant coffee and stir to dissolve. Pour half the hot coffee carefully into each mug. Stir briskly to dissolve chocolate syrup. Garnish with lightly sweetened whipped cream, if desired. Serve immediately!
