Pam Williams, founder of the specialty chocolatier, au Chocolat, and author/publisher of three cookbooks, including the Canadian best selling chocolate cookbook, Oh Truffles, writes an enlightening column on chocolate for Sally's Place. There are currently eight columns online and each generally follows a newsletter-like organization, with tidbits on chocolate and its history, a profile of a chocolate maker, chocolate events, readers' global finds and a listing of recent articles and books. If that's not enough to make a few pimples start popping out and your blood sugar rise, Pam closes each column with a lesson on chocolate appreciation and one or more recipes.

After surfing the word chocolate across the web in several search engines, this remains our favorite site for a simple yet intelligent approach to its subject and the depth of knowledge one can take away in just a few minutes reading.
