
Of Cabbages and Kings
Cabbage has long been a major staple in China, having long been subsidized by the government. For years it was the people's patriotic duty to consume vast amounts of it. But new market economies now make other vegetables available, and the one-time king of the harvest is being overproduced in such quantities that it rots in huge piles and many farmers claim this is the last time they will grow it. Lettuce, snow peas and broccoli are common now, when just a few years before they were unknown in certain areas. Still, cabbage is a mainstay in colder areas, where it is pickled and preserved for the harsh winter months.
Ask any student the four major food groups and you are likely to get a reply like this: Duh...fast, fried, frozen and junk? But colleges serving food should take more responsibility and many do. Which colleges serve the best food? The LA Times reports that the Physicians Committee for Responsible Medicine ranked North Carolina's Duke University first for its fresh pastas, hummus, stir-fried veggies and Mongolian barbecue. California, famous for its emphasis on fresh foods, showed merit with Caltech in 13th place, Pomona in 15th and UCLA in 27th. As a group, military institutions failed miserably. The Air Force Academy, Naval Academy and the prestigious West Point hit the bottom of the Top 40 list with ham steaks, hot dogs, peanut butter and jelly. Salads and steamed veggies were considered alternative cuisine.
