Frosting & Finishing the Yule Log

Chocolate/Hazelnut Frosting

One of the great discoveries is chocolate and toasted hazelnuts. If you're interested in trying it, take a good cup of hazelnuts and toast them in the oven until they are golden brown. Rub them between your palms so their skins fall off, then run them through a food processor till they are quite fine. (If the nuts are warm, they will form a paste—that's okay.) Stir in the hazelnut powder or paste into any chocolate frosting to taste. You'll need about 1 cup of hazelnut paste for 4 cups of chocolate frosting.

 

Finishing the Yule Log

After you ice the log, use a fork the rake the frosting. Then slice off a piece from one end so the log looks freshly cut and smush the slice onto the log somewhere to resemble a knot or sawed off branch.
