Oysters with a Tomato Salsa

(cold appetizer, serves 1)

 
  • 2 tomatoes cut in small cubes
  • 1/2 ounce chopped garlic
  • 3 tablespoons olive oil
  • 2 ounces pesto
  • 4 oysters on the half shell

Mix the tomatoes, garlic, olive oil, and pesto together. Place 1/2 ounce on each oyster and serve.
