
This earthy red sauce made with red, ripe jalapeños, vinegar, and salt was created in 1987, when two golfing buddies grew too many jalapeños. Like many sauce stories, Arizona Gunslinger was bottled at home in the kitchen until 1990, when sales started soaring. Arizona Gunslinger now casts its net as far as Japan.
Also from Arizona, this tangy sauce provides a billowing, middle-of-the-mouth heat from the red serranos and habaneros, which are blended with fresh onions, fresh garlic, and spices in a tomato base.
This savory sauce of jalapeños, green chiles (seeds included), onions, carrots, garlic, vinegar, and spices is made by a family-owned company a few miles north of the Mexican border in Tucumcari. Juliet Kibbey England was born on a cattle ranch in Sonora, Mexico, and was married for years to an Arizona cattle rancher. She started a ranch museum at the Santa Cruz Chili & Spice Company with related memorabilia (her husband was involved in early aviation, which is also on display), and her food products highlight the authentic flavors of the Santa Cruz valley.
