Peru

Beginning with the Incas, Peruvian cuisine has been influenced by a series of immigrants, including the Spanish, Basques, Africans, Sino-Cantonese, Japanese and finally Italians. Peruvian cuisine combines the flavors of four continents. Along the Peruvian coast alone there are more than two thousand different types of soups and more than 250 traditional desserts.

Peru's unique geography, combing a wide variety of environments, from high mountains to barren deserts, from Amazon jungles to beautiuful sea coasts, also contributes to wide variety of foods found there. Peru has blended many distinct races and cultures, and incorporated ancient cuisine into modern Peruvian cooking.
