The Caribbean includes islands and countries as diverse as Cuba, Curacao, Dominica, Dominican Republic, French Antilles, Guadeloupe and Martinique, Haiti, Jamaica, Trinidad and Tobago, and The Virgin Islands. Common foods like seafood, chicken and coconut, as well as recipes like jerk and callaloo, unite these islands into a heterogeneous culinary paradise.
Place the guavas and sugar in the jar of a food processor and purée until smooth. Force the purée through a food mill and refrigerate for at least 1 hour.
Beat the cream until stiff peaks form; do not overbeat. Using clean beaters, beat the egg whites until stiff. Gently fold the purée into the cream and egg whites until no white shows. Place mixture into serving dishes and refrigerate until serving time.
